2023 'Midnight Disco' Pet Nat

A complex arrangement of aroma, flavour and texture intersect beautifully in our 2023 Midnight Disco pet nat that if we’re being honest, is made more like a thoughtful cremant, carefully bottled for secondary fermentation to yield 3ATM of pressure with a persistent and soft foam of mousse.
On the nose there are notes of rhubarb, quince and bergamot with floral rose and orange blossom. A surprising, but welcomed fruit sweetness is present on the palate with wild strawberry, raspberry and strawberry compote at the front, a creamy leesy influence to build up the mid-palate and a bright but dry orange sherbet finish.
The base wine is an assemblage of 2023 vintage Syrah rose (fermented and aged in stainless steel) with selected barrels of Chardonnay and Sauvignon Blanc. The juice of ripe shiraz was added as the tirage component prior to bottling for secondary fermentation in November of 2023. Rested on lees for 24 months, the wine has exceptional clarity and minimal titrates, while remaining un-disgorged, with no dosage to allow for further aging in the years to come.
