2022 'Light Breaks Dawn' Cabernet Franc

A varietal expression with violets, blackcurrant and oolong tea leaves on the nose and a spicey sarsaparilla like palate with layerings of bramble and dehydrated strawberry. The tannins are velvety and well integrated but not to be misjudged - this one can be serious and really comes to life with food. Cabernet Franc was 100% hand destemmed into 1000L flower pots and macerated on skins for 3 weeks, with gentle cap management only to wet the cap twice daily. The gentle working of the ferment has allowed the wine to retain its fruit profile without over extraction of tannins. Once dry, it was gently pressed off using a hand basket press and aged in stainless steel for 5 months, then transferred under argon to seasoned French barriques for 3 months, with bottling taking place in November 2022.
