2022 'Into the Night' Cabernet Sauvignon

PALATE
Dark Chocolate

Beetroot

Blackcurrant, Musk and Cherry Wood on the nose with Dark Chocolate, Burnt Orange and Beetroots on the palate. The tannins are chalky and hold the wine together in the mid palate but soften towards the back palate. This wine could age but there’s also enough primary fruit to drink now.

Cabernet Sauvignon was hand destemmed into a 1000L flower pot and macerated on skins for 23 days; with gentle cap management to wet the cap twice daily. The gentle working of the ferment has allowed the wine to retain its fruit profile without over extraction of tannins. Once dry it was gently pressed off using a hand basket press and aged in seasoned French barriques and Hogs for 11 months, with bottling taking place in February of 2022.

Very Limited - Only 1112 bottles produced.
